This bourbon was finished in casks of French Limousin oak that were used to age XO cognacs for twelve years. A bit of water fades the spices and vanilla, leaving a raisiny fruitiness that’s hard to hold on to. The cognac half fades pretty quickly and leaves vanilla, a bit of citrus, and a more complex mix of spices (nutmeg? mace?). On the tongue, there is a very enjoyable 50/50 taste of both bourbon and cognac. The nose has a bit of warm spice (cinnamon maybe?), burned sugar, and bright fruit. The finishing casks for this bourbon were used in the production of malmsey madiera, the sweetest and richest tasting of the madeiras, with deep honeyed flavors. After a bit of water, a softer toffee and lighter fruit note is back with overtones of honey and rye’s signature spice. I’m not getting any hint of the cask, but it is a malmsey madiera, so that could account for all the pseudosweetness. Interestingly enough, a sip is much less sweet, but still gives a feeling of being sweet. This is very sweet on the nose with fruit, caramel, and vanilla. Oloroso is a concentrated sherry with more sweetness than other styles of sherry. The distiller chose used Oloroso sherry casks to finish this 30% rye blend. The finish is pretty persistent and brings a bit of cocoa and nuttiness at the very end. After opening up with some water, the fruit is more forward and the woody note from the nose returns. I got just a hint of musty sherry, but it stays fruity. The high rye content is definitely represented by spice and dark fruit.

The Belle Meade Bourbon distillery followed the trend of aging bourbon in other liquors’ casks. Tonight I was lucky enough to explore the differences a finishing cask can make on a bourbon.
A three-year aging period delivers only 130 bottles of 90 proof deliciousness. The mash bill is similar to those of that time, the distillate is barrelled at a lower proof than modern ryes and then non-chill filtered into high-char oak barrels. What they are aiming for with their offerings is a faithful reproduction, or as close as they can get, of what a rye whiskey would have been like at the time of the American Revolution when New York was the epicenter of rye whiskey production. I did a little research on the Fort Hamilton Distillery. A bit of water smoothed over some of the bright mint notes and softened the finish quite a bit. A good bit of sweetness was still present, and it lingered for quite awhile. There was a lot of fresh oak up front, so much so that I wondered if the aging barrels were low char (actually the opposite is the case).
A sip brought the rye grain’s usual spice, but it was more of a cool, herbal spice than the common warm peppery note. The high-rye content was evident in a vegetal/herbal undertone that was slightly medicinal.

The release is part of a wider campaign celebrating the women breaking boundaries in the drinks industry and beyond.
